Does anyone have a good recipe for Christmas Cut- outs?

I'm looking for a recipe for cut outs that are nice and soft, it seems that every recipe i try, the cookies come out hard and crunchy after they cool- and i don't over cook them haha. also im looking for a recipe for icing for the cookies that is different that the usual corn starch and powdered sugar concoction.
