Help with potato plants?

i planted russet potatoes from a store bought potatoe eye. Its been about 3 weeks and the plant is growing so big and is begining to flower. How long until the potatoes are ready to pick and eat? Also i planted italian squash seeds, how long til they are ready to eat? Thanks in advance for your answers. :)
